Andy of Brookings Fishing Charters has cooked up several variations of seafood bisque recipes. This is his favorite, in part because it is simple and quick, yet incredibly delicious. This recipe is perfect with rockfish, lingcod or halibut, combined with shrimp (either large shelled and deveined shrimp or Oregon Coast salad or cocktail shrimp), and fresh crab meat. Just rockfish and crab, or fish fillets and shrimp meat will work with the recipe, although all three give it a 10 out of 10. <\/p>\n\n\n\n<p>The Louisiana twist to the recipe &#8211; with cajun seasonings &#8211; gives it a unique flavor that complements Pacific Northwest seafood.<\/p>\n\n\n\n<p>Seafood Bisque takes just a few minutes to prep, and is ready to serve in 45 minutes.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"2560\" height=\"1920\" src=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2023\/06\/IMG_4022-scaled.jpg\" alt=\"\" class=\"wp-image-1551\" srcset=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2023\/06\/IMG_4022-scaled.jpg 2560w, https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2023\/06\/IMG_4022-300x225.jpg 300w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 1362px) 62vw, 840px\" \/><figcaption class=\"wp-element-caption\"><strong>Seafood Bisque is a great way to enjoy the rockfish caught on our charter boats.<\/strong><\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Rockfish and Crab Bisque<\/h2>\n\n\n\n<p>1 pound rockfish, lingcod or halibut fillets, cut into small chunks<\/p>\n\n\n\n<p>1\/2 pound crab meat<\/p>\n\n\n\n<p>1\/2 pound shrimp meat<\/p>\n\n\n\n<p>2 cubes unsalted butter<\/p>\n\n\n\n<p>1 bunch green onion, chopped <\/p>\n\n\n\n<p>2 cups heavy cream<\/p>\n\n\n\n<p>2 cups half and half<\/p>\n\n\n\n<p>1\/4 cup white flour<\/p>\n\n\n\n<p>1\/2 can creamed corn (optional ingredient)<\/p>\n\n\n\n<p>1 tsp cajun seasoning<\/p>\n\n\n\n<p>1 tsp Old Bay seasoning<\/p>\n\n\n\n<p>1\/2 tsp cayenne pepper<\/p>\n\n\n\n<p>1\/2 tsp salt<\/p>\n\n\n\n<p>1\/2 tsp black pepper<\/p>\n\n\n\n<p>Melt butter in a large pot, and saute green onions. <\/p>\n\n\n\n<p>Sprinkle flour over the melted butter and onions, and stir well.<\/p>\n\n\n\n<p>Add heavy cream, half and half, seafood, seasonings, and if desires, the half can of cream corn. Stir continuously as the bisque is brought to a boil, then reduce heat and simmer for 30 minutes. The raw fish will quickly cook, and add an incredible flavor to the creamy soup.<\/p>\n\n\n\n<p>Garnish with fresh parsley.
