Poke has endless possibilities &#8211; there are countless ways to marinate the fish, and there are just as many options for toppings. <\/p>\n\n\n\n<p>Poke originated in Hawaii, where it is often simply served as an appetizer. Mark, spent years working at a lodge owned by a family from Hawaii. They made a simple marinade with Mama Kay&#8217;s Hawaiian Seasoning, a little sesame oil, and thinly sliced green onions. <\/p>\n\n\n\n<p>On the Mainland, marinades often include a few more ingredients, with plenty of options for toppings. Served with sushi-style rice, poke bowls are a delicious, and filling meal. Red chili paste, or wasabi can be added to add heat and spice.<\/p>\n\n\n\n<p>While poke can be made with freshly caught albacore tuna, or ahi tuna, frozen fish is easier to work with. Partially thawed tuna is firmer, and holds together while it is thinly sliced. Don&#8217;t just use steamed white rice. Sushi rice is more flavorful, and perfectly complements poke. A spicy mayonnaise and rice seasoning complete the meal. It is easy to make delicious sushi rice.<\/strong><\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Sushi Rice<\/h2>\n\n\n\n<p>1 cup sushi rice or jasmine rice<\/p>\n\n\n\n<p>1 1\/4 cup water<\/p>\n\n\n\n<p>1 tbs sugar<\/p>\n\n\n\n<p>1\/4 cup rice vinegar<\/p>\n\n\n\n<p>Rinse the rice several times, until the water runs clear as it is drained.<\/p>\n\n\n\n<p>Bring rice and water to a boil, cover, and simmer 20 minutes. <\/p>\n\n\n\n<p>Remove from heat, and allow to sit, covered, for 10 minutes.<\/p>\n\n\n\n<p>In a small pot, heat rice vinegar, sugar and salt. Bring to a boil, constantly stirring, to dissolve sugar.<\/p>\n\n\n\n<p>Fluff the rice with a fork, and slowly stir in the vinegar, sugar and salt mixture. Gently stir, and allow to marinate for at least 15 minutes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Dressing<\/h2>\n\n\n\n<p>1\/2 cup mayonnaise<\/p>\n\n\n\n<p>1 tsp sriracha<\/p>\n\n\n\n<p>salt and pepper to taste<\/p>\n\n\n\n<p>Mix the mayonnaise and sriracha in a bowl, and salt and pepper to taste. Place the dressing in a zipper bag, and cut the corner to drizzle over the poke bowl before serving.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Toppings<\/h2>\n\n\n\n<p>1 cup sliced cucmber<\/p>\n\n\n\n<p>1\/4 cup sliced mango<\/p>\n\n\n\n<p>1\/2 cup sliced radish<\/p>\n\n\n\n<p>1\/4 cup finley chopped green onion, or sweet white onion<\/p>\n\n\n\n<p>2 large avocado, peeled and sliced<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"694\" src=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2024\/01\/IMG_9615-1024x694.jpg\" alt=\"\" class=\"wp-image-2047\" srcset=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2024\/01\/IMG_9615-1024x694.jpg 1024w, https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2024\/01\/IMG_9615-300x203.jpg 300w, https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2024\/01\/IMG_9615-768x521.jpg 768w, https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2024\/01\/IMG_9615-1536x1041.jpg 1536w, https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2024\/01\/IMG_9615-2048x1388.jpg 2048w, https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2024\/01\/IMG_9615-1200x813.jpg 1200w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 1362px) 62vw, 840px\" \/><figcaption class=\"wp-element-caption\"><strong>Place a serving of albacore in each bowl of rice, then add toppings and drizzle with spicy mayonnaise<\/strong>.<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Making the Poke Bowls<\/h2>\n\n\n\n<p>Divide the rice into three or four bowls<\/p>\n\n\n\n<p>Add a scoop of marinated tuna to each bowl, and add toppings.<\/p>\n\n\n\n<p>Sprinkle with sesame seeds and dried seaweed, or Nori Komi Furikake Rice Seasoning.
