This recipe is easy, quick, and will leave your family or guests wanting a second helping. It also is friendly to low-carb and keto diets.<\/p>\n\n\n\n<p>Rockfish and Sausage Stew can be prepared from fresh or frozen rockfish. Other white-fleshed fish fillets, including lingcod, halibut or Pacific cod can be used. Great on a cold, stormy winter day with fish from the freezer, or on those cool, foggy Oregon Coast summer evenings.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"2560\" height=\"1996\" src=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2021\/08\/IMG_0260-1-scaled.jpg\" alt=\"\" class=\"wp-image-1986\" srcset=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2021\/08\/IMG_0260-1-scaled.jpg 2560w, https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2021\/08\/IMG_0260-1-300x234.jpg 300w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 1362px) 62vw, 840px\" \/><figcaption class=\"wp-element-caption\">Rockfish and Sausage Stew is a delicious way to enjoy Oregon Coast rockfish.<\/figcaption><\/figure>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<p>2 tbsp. butter or olive oil<\/p>\n\n\n\n<p>6 oz. cooked andouille sausage, sliced<\/p>\n\n\n\n<p>2 small leeks, white and light green portions, sliced<\/p>\n\n\n\n<p>1 fennel bulb, chopped<\/p>\n\n\n\n<p>2 garlic cloves, chopped<\/p>\n\n\n\n<p>2 tbsp. parsley, chopped<\/p>\n\n\n\n<p>2 bay leaves<\/p>\n\n\n\n<p>1\/3 cup white wine<\/p>\n\n\n\n<p>1 can (28 oz.) diced tomatoes<\/p>\n\n\n\n<p>2 bottles (8 oz, each) clam juice<\/p>\n\n\n\n<p>3 cups water<\/p>\n\n\n\n<p>1 lb. rockfish fillets, boneless and skinless, cut into small pieces<\/p>\n\n\n\n<p>1\/2 lb. Oregon pink shrimp meat, or peeled and deveined medium shrimp<\/p>\n\n\n\n<p>salt and pepper to taste<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"2560\" height=\"1790\" src=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2021\/08\/IMG_0255-scaled.jpg\" alt=\"\" class=\"wp-image-470\" srcset=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2021\/08\/IMG_0255-scaled.jpg 2560w, https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2021\/08\/IMG_0255-300x210.jpg 300w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 1362px) 62vw, 840px\" \/><figcaption class=\"wp-element-caption\">Cut a pound of rockfish fillets into small pieces, about 1 square inch each. The fillets of two or three rockfish is all that is needed for this recipe. <\/figcaption><\/figure>\n\n\n\n<p>In a large pot, heat the olive oil or butter, and add sliced sausage, leeks and fennel. Cook over medium heat for 5 minutes. Add garlic and bay leaves. Add white wine and cook for 2 minutes.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"2560\" height=\"1920\" src=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2021\/08\/IMG_0253-scaled.jpg\" alt=\"\" class=\"wp-image-468\" srcset=\"https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2021\/08\/IMG_0253-scaled.jpg 2560w, https:\/\/brookingsfishing.com\/reports\/wp-content\/uploads\/2021\/08\/IMG_0253-300x225.jpg 300w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 1362px) 62vw, 840px\" \/><\/figure>\n\n\n\n<p>Add tomatoes and increase heat to medium high. Cook, stirring occasionally, for 10 minutes. Add clam juice and 3 cups water. Bring to a boil, and add pieces of rockfish. Cook 4 minutes.
